The spiky protrusions down the throat are soft structures and common to turtles. They retain anything they've gulped down whilst they squeeze the sea water out of their long throats before swallowing properly. It's also why they can't regurgitate plastic bags etc.

A lot of these creatures are showing distension from being dragged up from the high pressure depths, hence the tongues and eyeballs all popping out.
