i'm unemployed right now
and due to the current financial crisis making it hard to find a job, as well as my postgraduate year of uni sucking all my time away, i get to spend whatever spare time i have weeping softly as i look at my depleted bank account and plead with centrelink to give me money.

oh, wait, the upside......um. well, i did learn to bake. i make a mean batch of choc mint cupcakes now.

makes 1 1/2 dozen
for the cupcakes:
225g self-raising flour
2 tbsp cocoa powder
1 tsp baking powder
225g caster sugar
225g butter
4 eggs
1tsp mint essence
100g choc chips

for the icing:
115g butter
225g icing sugar (sieved)
1stp mint essence
green food colouring
11g choc chips

preheat oven to 160m sieve flour, cocoa and baking powder. beat sugar and butter together in seperate bowl until smooth, adding eggs one at a time, gradually add flour mixture, stir in mint essence and choc chips, spoon into 18 baking cases and bake for 20mins.
beat butter and icing sugar until smooth, stir in essence and food colouring, ice cakes and decorate with choc chips.
