don't use tomato or bell peppers

just onions, carrots, peas,(yes, peas) mushrooms, oyster sauce, fish sauce, soy sauce, cardamom, cumin, fivespice, garlic, ginger, dried chilli flakes, meat and generic curry powder

Yer I like indian theme for curry, I love chinese food but hate all oriental curries I'v tried,

I do agree about your fruit though, apple and sultanas in curry is just wrong,

I used habaneros sauce at lot. love to put some in my home made burgers... I'v yet to experience the ghost though!
