what does she know.
You should use a deep pan, and stir the water to create a little whirlpool. That way the egg stays in the middle and doesnt break up whilst poaching. Plus add a little vinegar to the water to help it stiffen up.

there are many ways to skin a cat
personally i will try her way... and then next week i will try yours, but until then i shall reserve judgement - 10 minutes does seem like a long time for a poached egg.
