steamed?are you quite mad, you need to roast these to get all that lully flavour, sure steaming is a clean way to cook and suitable for a lot of dishes, but steamed kitten is like saying 'i know, i'm going to have steamed venison' it does the job but there's not heart to the cooking.

You don't have to shave them!Blanch them for a couple of minutes, and then you can skin them with no difficulty. You could try to skin them without blanching them, but that'd make things terribly difficult.
