goose makes a nice christmas dinner, but it's fatty and a bugger to carve
gammon is pointless. neither pork nor bacon nor ham - it has the worst attributes of all three without any of the redeeming features. it should have been outlawed after the 50s

Turkey is lovely when done right. Cover with a layer of cranberry, horseradish, mustard and wine glaze, and roast with a good amount of white wine in the roasting tin.

With the reduced wine and stock and crispy roasties I tell thee, it's ambrosia.
