And thats kind of my point. The only reason you'd go into business is to make money, is it not? And if you want to make money, you probably want to get rich. Well she's rich now. Why not pursue something else?

How do you know she has enough money to give up?
I agree with you to a point, that if you can get, say, 1 million in the bank you can then just stop and you've "won". But people tend to adjust their lives to their earnings too and in order to just stop someone like Deborah Meaden would have to live in a two bed terrace and have only one car, for example.
Also money's a complex thing and a lot of millionaires could be poorer than you or I if a couple of points fell off some shares somewhere. Earning money on that scale is a kind of never ending ride where getting off is tough and staying on too long is dangerous.

Maybe I am simplifying it a little. I just know that if it was me, and my bank balance went into the 8 figure mark, I'd buy a small island in the sun, build a little house, and spend the rest of my days shooting at passers by from the beach with a .50 cal machine gun.

I've gone as far as scouting for locations on Google Earth.
So I know where I'd be looking to live -- depending on my budget.
Sadly I know I'll never earn enough to live on an island in a fjord, never mind buy Deception Iand for use as the Antarctic mooring point for my converted aircraft carrier.

Also the people they socialise with are also extremeley wealthy and wealth becomes a game, especially for people far richer than Meaden. Agree with the OP I would retire if I could, so much fun just doing what you wanna do every day but that's why I'm not rich.
