I do something similar in a wine and cream sauce with a fuckton of tarragon, rather lovely.

The sauce already had tarragon in it
I added some mixed herbs, which in retrospect it could probably have done without. Still, it was bloody lovely.

I do a chicken leek and mushroom thing
With cream and wine and tarragon that isn't bad.
