Most chains operate franchises, so there is no real consistency across the chain apart from possibly where they order their supplies from.

I watched Undercover Boss doing Pizza Go Go, and it seems you're half right.
One rank place proofed dough ever 3 days in bin bags on a disgusting freezer, and left frozen food out for days...., another one did fresh dough twice a day.
