This is why...
faeces is only brown due to bile pigments
If these are not present then the faeces will be colourless
Bile pigments are a factor of a functional enterohepatic circulation
white faeces are a result of a defective enterohepatic circulation
The most common reason for this occurring in the 70s/80s and not so much now is due to the fact that we have largely eradicated Rubarth's disease aka infectious canine hepatitis.
In fact, the textbooks of that era are full of long sections regarding hepatitis.
Hepatitis in dogs is now quite uncommon.
White dog crap has disappeared
Unfortunately white dog faeces are therefore not a sign of 'good health'
