well if you're interested:
it's because when you save something as a GIF it can only store 256 colours, so it picks the most popular and then disposes of the rest. the fewer colours you use the more optimised it can make itself... so by doing a fade you're forcing it to keep lots of shades of grey as well as the main colours.
