seems to be very good and certainly espouses the use of a meat thermometer which completely revolutionised how I cook meat. I tend to stop the cooking before the recommended temperature as the temp will rise further during the resting period. resting is something I ignored for a lot of years (why would you let something get cold before you eat it?) but I've seen the error of my ways.

This is a normal post A good guide, and pretty comprehensive.
Would have liked to have seen the reverse sear (oven - pan) in there as a method for cooking steaks though. IMHO it produces the most consistent results and the taste is outstanding.

This is a normal post Preheat pan for 15 minutes at full gas.
Oil the steak, 3 minutes a side.
Nicely black and blue.

Bit of pepper if you're feeling posh.

My pans would have started to melt by then - makes the kitchen nice and warm though.

(Got a new gas hob and its like cooking with an acetylene torch)
