I've done a few.
A coilgun - basically, this is a tube wrapped with coils of wire. You put a projectile in the end and turn the coils on - this sucks the projectile towards the center of the magnetic field. When it reaches the center, you turn off the coil, and the projectile carries on moving. If you have multiple coils, you can reach quite a speed.

It's also known as a 'Linear Accelerator'.

An electric bike - it reached quite a speed for a few seconds, and then overheated.

But the best one was probably this:

"Let's see what happens when I connect two 240v transformers back-to-back, and then electrocute myself?"

Yes, it hurts.

I once made a mass driver with my mates and we didn't realise how powerful it was. We managed to fire a painted rock right up in the air and out of site. We tried to find the rock but couldn't until a week later when we read in the local newspaper that 'vandals' in the neighbouring village (3 miles away!) had 'chucked' a rock onto the roof of a disused house and completely shattered it. We put it away after that.
