I was advised:
Right first of all buy mutton (not goat) this recipe is for 1kg meat.
Feeds 4. (Most halaal butchers do this)
1kg Leg Mutton (mix it with 3/4kg off the bone 1/4 kg on the bone, the marrow from the bone is an essential part of the flavour)
1 large fine chopped onion
2 cloves fine chopped garlic
1 tin of tomatoes
1/2 level teaspoon of black pepper
1 heaped teaspoon of curry powder
1 heaped teaspoon of all perpose seasoning
1 heaped teaspoon of dried thyme.
Method.
Remove most of the fat from the mutton and then wash well.
add everything in to a large bowl and mix well, cover the bowl in cling film and leave at least 8-12 hours to marinate (in the fridge)
Seal the meat dont brown it, (only just) cover with with water and simmer for about 4 hours adding water as the level drops.
