If I were you, I'd give them a flat rate agreed before hand,
Otherwise you get in to trouble with drinks take and stuff.
Make as an accurate a guess as you can at head count for the night, figure a Conservative estimate at takings, agree a fixed price based on that. If it goes wildly better it looks better you giving them a few extra quid on top to say thanks for the effort, than losing money if it doesn't work out.
