We had an empty paddock instead of an amusement park where I grew up.
Its not fair.

It's a nice, short effort, but it tries too hard by forcing the paddock in when it could have been done better. The fundamental joke does work though, but could be improved thusly:

'We had an empty paddock' suggests that the paddock was always there. This may not be important at the moment, but later in the joke the difference between 'always' and 'may have been' will become important.

'instead' implies that you may have had options (but we already know that there is only a paddock - see above)

'an amusement park' - This is going to be the point of the joke, so, normally, you need to save it to the end. Although in this instance the joke can work without you actually describing the park at all.

'where I grew up' - you are bringing your age in too late. The only reason to do this is when your age is the punchline. Otherwise your age should be established instantly if it is relevant or not at all.

'Its not fair'. Your punchline has not only been telegraphed by the phrase 'empty paddock' earlier, but while grammatically correct doesn't work for the purposes of the joke you are trying to make.

So, if you do want to stand by this (already weak) joke, I suggest something like:

When I grew up, I always wanted to go on the Roller Coasters. One day, the paddock down the road advertised they were coming, but when we got there the field was full of horses. No fair.
