Depends what you're looking for really.
The Grassmarket area is generally very good, but will be absolutely fucking mobbed. Lots of stuff going on - street 'performances' and all that gash. The Royal Mile is pretty good for that stuff as well.

George Street (just behind and parallel to Princes Street) is the place to go if you're after posh, trendy pubs and clubs. Generally the kind of people who'd pay £10 for a salad would probably go there.

All of the central areas will be mobbed - in particular the Old Town (Grassmarket, Cowgate, etc)
as that's where most of the Fringe venues are located. The New Town - George Street, the West End etc may be slightly quieter as there are fewer venues round there.

The tram is a crock of shit and only runs between the airport and Queen Street.

Pubs and clubs etc will be open late - 1,2,3am - just varies really.

Actually, come to think of it, Stockbridge is a really nice part of town
Just a bit north of the centre - 10-15 min walk away. Loads of pubs and some decent restaurants. Some Fringe venues though, so it won't be quiet, but should be ok-ish.
