Our chef wants to extend the vegi menu. Present one is a bit limited.

if he is any good as a chef
He should be able to very easily rustle up vegi burgers, I would suggest that once the first service has been done reuse the left over veg, you can make great burgers/ crumbles etc from essentially bubble and squeak

I'd be concerned about a 'chef' that couldn't manage to rustle up a few different vegi dishes and needed to go to an inexperienced 'landlord' for assistance
